Yesterday I shared a picture of my breakfast on instastory that sent my Instagram followers into a frenzy asking for the recipe. Like most people I know, I go through phases with the foods that I love and make on a consistent basis. I thought I would share with you three things I have loved eating, and making, the past several weeks. Since I only cook for myself right now, these all serve one person but you can easily make them for more by duplicating the recipe. I also don’t usually measure things when I’m cooking (oops! sorry mom) so these measurements aren’t exact but are pretty close to what I have been making. If you like blueberries instead of peaches in your smoothies, go for it! One thing I love about cooking is being creative and inventing something new.

2 large handfuls of Spinach
3 Slices Frozen Peach
1 Banana (can also be frozen if you want)
1/2 cup Carrot Juice (or enough to make the smoothie blend properly)
Put all the ingredients into a blender and mix until completely smooth.
Sea Salt + Honey Peanut Butter French Toast:
1/2 cup Milk
1 teaspoon Cinnamon
1 teaspoon Vanilla Extract
2 Slices of Wheat Bread
Soak the bread in the combined liquid mixture of egg, milk, cinnamon, and vanilla for about 1 minute on each side. Spray pan with nonstick or use a small pad of butter. Fry on each side for 1-2 minutes or until the bread is lightly browned and crispy on the outside and the egg appears fully cooked. Transfer one piece of french toast to the plate and spread evenly with peanut butter (it will melt as you spread). The place the second piece on top and finish with a light drizzle of honey and dusting of sea salt. Add bananas for an extra bonus!
Warm Spinach Avocado Toast:
1 slice of Wheat Bread toasted
1/2 Avocado mashed
Handful Spinach steamed
Salt and Pepper
*optional Red Pepper Flakes
After toasting the bread, add the mashed avocado and salt and pepper. Then add lightly chopped warm wilted spinach and red pepper flakes.
